day 169..... Tacos in foil :)

So... there is a Snow Ball next weekend that the 2 older teenagers are going to. Caitlin had ordered her dress online. Should have fit perfectly according to the size chart. Well, it came in the mail today. Needless to say, it didn't fit. So we had to make a quick dash to Grand Forks to get a different dress. Long story made short... no time to make supper when we got home at 5:15. Thank goodness that yesterday I cooked up 18 pounds of burger. Tacos it is... or was. Anyways, I am sending tacos to the teenagers that are working tonight. We haven't had them in a while and they are a BIG favorite around here.

day 144..... and then there was one

This may look like an ordinary bowl of chili to you, but it isn't. It is the last one out of the pot. And we aren't talking a small, normal sized pot. We made a HUGE pot of chili in the big cast iron dutch oven. We all had some for lunch. Then we had some more. Football day you know. Well, then around supper time, Brian went to get a bowl. That sounded kinda good. I decided to go get a bowl. Can you believe this? There was only 1 bowl left. And it was mine. And I took it to the bedroom so I didn't have to share, because I always share. But as luck would have it, I had to share after all. Hazen. Enough said.

day 132..... MY DONUT PANS CAME!!!!!

I should seriously make this picture GIANT sized. That is how good these donuts are. I ordered regular and mini sized donut pans and they came in the mail today. Needless to say, I quickly set to work converting and tweaking a "regular" chocolate cake donut recipe into a Gluten Free one. The results were amazing. We are planning to make pumpkin donuts with cream cheese glaze and also some peanut butter ones this week.

day 131..... Halloween Cupcakes

These are the few little remains that survived the carnage otherwise known as Halloween. Their party to be exact. You see, they get the best of both worlds. They get to party it up all day with games, coloring pages, you name it... then they get dressed up and go trick-or-treating. And let me tell you.. the candy does flow freely around these parts. In about 2 and a half streets, they had completely filled 2 fabric shopping bags. Then they got cold. So, back home we go to have their party. More games, movies, food, more food, and oh yeah, did I mention food. And then the candy.

day 124..... Betty's doing it again

I am really not receiving any compensation from Betty Crocker. I am just loving the fact that a major company like that is finally taking notice of the plight of gluten intolerant people. So many times, we have meandered through the grocery isles saying, "Oh, I wish Betty Crocker would make this or that gluten free." They have finally started listening. The kids love the fact that they can go into the "regular" stores and find more snacking options available to them. Heck, we can find many of the items here in our tiny town.

This was a meatloaf with a roll of ham and cheese inside and then smothered with pizza sauce. Had a cheesy hash brown casserole on the side and a yummy salad.

day 114..... Yummy Ice Cream

They say good ice cream can fix the worst of moods. Imagine how darn good it tastes when things are going pretty good :)  Hubby went to the store and bought some for ME! He hates coffee, so this is really, really mine. Unfortunately, the kids LOVE the the taste of coffee as well, so I have to be stealthy with it.

day 108..... Lasagna with Homemade Noodles


We made Lasagna with homemade lasagna noodles tonight. It was delicious and now I am never going to be able to use noodles out of a box again. There is another picture of cake. We have had this cake on here before, but tonight Maddie made it.

day 105..... Creamy Chicken and Rice Casserole

This was delicious. Stewed chicken meat, so tender and juicy. Brown rice. A creamy chicken sauce. Topped with bread crumbs and baked. Served with peas and carrots and a salad. But you know what stole the show tonight for me? On the very left of the picture is a blue bowl with little brownish things in it. Homemade garlic basil croutons. They were amazing!

day 100..... Homemade Shake n Bake

We made another 100 day mark!!!!! Tonight we had homemade shake n bake style chicken with scalloped corn casserole and sliced tomatoes. We had to cover tomato plants tonight as we are calling for a freeze warning with temps near 31.
