day 292... 3 Ingredient Success

Soooooo.... this morning I was so intently focused on getting out to the chicken coop, that I completely forgot to put supper in the crockpot. The day flew by rather quickly and before I knew it, it was suppertime and I was in a panic. Someone suggested mac and cheese, but we had pasta just last night. So, I did the next best thing. One small box of instant brown rice, a box of of Kraft Deluxe Cheese, and Spam. I cooked the rice as directed on the box. When it was ready, I stirred the diced up cheese in and put a lid on it. While the cheese was melting, I lightly browned the diced Spam in a skillet. I stirred the meat-like substance into the cheesy rice, and voila... supper success!

Day 194..... I DIDN'T BLOW UP THE HOUSE!!!

I tried out my new toy today. I got a new 10 quart Fagor Futuro Pressure Cooker. I cooked almost 5 pounds of pork loin in it. By the time I got it figured out, total cooking time was about 30 minutes. It was wonderful. It was fun. It was so tender, and juicy. I am sold. It claims to be "The Single Most Important Piece of Cookware You'll Ever Own". Well, I don't know about you, but EVER is a mighty powerful word. But they may be on to something. My intentions are always good. Today was supposed to be a crock pot kind of day. But, my bad, I forgot to get the pork out to thaw in time. In the crock pot, it would have been fork tender as well. But, when I forget to thaw or forget to start the crock pot, 30 minutes vs. 6-8 hours? That is a no brainer. I am very excited to see all the things I can make in it. I am so impressed already, I am about to order the Fagor Futuro 5 piece set that includes a 6 quart and a 4 quart. Those should be perfect for smaller amounts of food. Between my cast iron dutch ovens, 7 quart crock pots, and now my super cooker... do I even need an oven?

day 193..... turkey... cheap turkey

So, I was in Sam's Club the other day, and back at the meat counter, they had a cooler with some frozen turkeys in it. They were on special for .58 a pound. I can't touch whole chickens for any cheaper than .89 a pound.So, we bought 3 of them. I made roast turkey for supper tonight. I am going to be able to get 2 more meals out of it. Turkey Alfredo and Rice Casserole for lunch tomorrow, and Turkey and Noodle Soup later in the week. And the best part? I got the turkey for just under $12. I will take 3 hearty meals for $12 any day.
