day 96..... Roats Beeps
In the words of Hazen, "This little piggy had Roats Beeps." And so did Hazen. Lots of it. He loves his mashed potatoes and gravy. He loves his roats beeps. He loves to eat his carrots. Now the peas..... he loves to pop those all over his place at the table. Let's just leave it that for his 2nd and 3rd helpings, I picked out the peas.

day 94..... Maddie Made Supper!!!
We have had Pizza Casserole on here before, but as I am not feeling the best, Maddie made supper and so it is on here again. It was great. Had green beans on the side. Need to get caught up on recipe posting. Maybe I will do that tomorrow IF I get the menus finished for October. We'll have to see about that one.

day 87..... Fried Chicken
... with mashed potatoes and country gravy. Only thing missing from this picture would have been biscuits. But I brain farted and forgot to start them in time. And let me tell you, after smelling this cooking for almost an hour, NOBODY was going to wait for biscuits.

day 80..... Pizza
Though I dearly LOVE pizza cooked on the grill, I am not going to give up pizza night on the menu because it is too windy to grill. We made it inside. Tonight we had (from left to right) Pepperoni and Beef, Chicken and Spinach Alfredo, and BBQ Chicken. We also had regular pepperoni, but it wouldn't fit nicely on the plate.

day 74..... The BEST Store Bought Gluten Free Bread EVER!!!
That Udi's bread is AMAZING!!! I am calling the store on Tuesday to inquire about ordering a case, or two, of it. It is soft and squishy just like I remember "real" bread being.

day 71..... Peach Dump Cake
This was by far the BEST peach dump cake or cobbler I have had in a very long time. It was super easy to puyt together. We stuck it in the oven just as we started to eat supper so it was hot and steamy, ready for ice cream as soon as everyone was finished with their supper.
1 29 ounce can of sliced peaches with juice
1 box of Betty Crocker Gluten Free yellow cake mix
1/2 cup butter or margarine
Preheat oven to 325°. Spray the bottom of a 9x13 pan with non-stick cooking spray. Pour the peaches, juice and all, into the pan. Evenly sprinkle the dry cake mix over the fruit. Melt butter in a pan, and then evenly pour over the cake mix. Bake in the oven for about 50 minutes, or until the top is lightly golden brown. Serve warm with ice cream, or let it cool if you like.

day 70..... Impossible Taco Pie
Impossible Taco Pie
1 pound ground burger (beef, turkey, or pork)
1/2 onion
Salt and pepper to taste
1 envelope taco seasoning
1/2 can kidney beans
3 eggs
1 1/2 cups of milk
3/4 gluten free flour blend of your choice
6 tomato slices
1 cup shredded cheddar cheese
Preheat oven to 400°. Brown burger and onion in skillet with salt and pepper until meat is browned. Add taco seasoning and stir. Line a pie plate with foil. Spray with non-stick cooking spray. Put meat in the bottom. Add the kidney beans. In a bowl, whisk eggs, milk, and flour until smooth. Pour over the meat mixture. Bake for 25 minutes. Place tomato slices on top and cover them with cheese. Bake an additional 8 minutes. Let sit for 5 minutes and slice and serve.
