day 69..... Zesty Turkey Skillet

Saute onion and garlic. Brown ground turkey. Add some zucchini cut into matchsticks. Add 2 11.5 ounce cans of V-8. Simmer until zucchini is tender and juice is reduced and starting to thicken. Serve over rice or noodles.

day 67..... Beanie Weenies

This might seem like a strange thing to post on here, but there is a very good reason for it. With a 7 pound can of pork & beans for $3.68 from your local Sam's Club and a few other ingredients, you can make a wonderful side dish for 12 people and have plenty of beans left to turn into a quick and fun lunch for the kids. I took half the can and added some other things to it a few days ago and made some very yummy baked beans. I took the other half of a can of beans today and added some hot dogs and made beanie weenies for the kids for lunch. I will post the recipe for the baked beans later.

day 65..... Italian Meatballs with Cheesy Green Beans and Cheese Puff Bread

Supper was awesome. The meatballs were delicious. The kids all love cheesy green beans. But the thing to get excited about??? The puffy bread. Super easy.

1 egg
1/3 cup olive oil
2/3 cup milk
1 1/2 cups tapioca flour
1/2 cup shredded cheese, your choice
1/2 tsp salt

Put it all in a blender and blend until smooth. Spray your mini muffin pans with non-stick cooking spray. Fill them until almost full. Bake at 400 degrees for 16 minutes. They will just be starting to brown very lightly. Turn them out onto a plate and serve.

day 63..... Scalloped Potatoes with Ham

Easy peasy lemon squeezy. Potatoes, ham, a little onion, and heavy cream. Bake at 375 until potatoes are tender. Stirring occasionally. Good stuff. Simple, easy ingredients.

day 59..... Enchiladas with Beans and Rice

We have done beef enchiladas before. Last time we did it casserole style with all them in the pan. Tonight we rolled individual enchiladas and plated them with some refried beans and some homemade spanish rice. Good stuff people.

day 57..... Ham & Cheese Wraps

Oh for yummy rolled up goodness. These are a snap to make and are a life saver for a gluten free family. I use my electric griddle and I can heat 6 corn tortillas at a time. Then a little smear of honey mustard, a leaf of lettuce fresh from the garden, a slice of cheese, a slice of ham... roll it up, slice it in half, and serve. Delicious!!!

day 54..... Chicken Pot Pie Casserole

This is what I did with supper leftovers from last night. I made a creamy chicken sauce and stirred in some chopped up chicken. I added some mixed vegetables. I topped it with a homemade, flaky pie crust. Baked it for about 20 minutes and finished it off with the broiler on high to brown it up nicely. The little ones didn't even complain about eating the veggies in it. And as usual, Trevin asked for seconds, which he got... and thirds, which he does not.

day 52..... Yummy Cookie-Like Crackers

This post was supposed to be a picture of S'mores over the fire pit. The temps are perfect hovering around 65. Even the drizzle wasn't too bad. But the wind. It was windy enough that we didn't feel safe having an open fire like that. So we nixed it for tonight. So instead of S'mores, you get to see the foundation of them. These crackers are a saving grace in a gluten free diet. We use them for S'mores. We add a little cinnamon and crush them up for a mock graham cracker crust. They have been a mainstay since the very beginning. We can find them in just about any health food store or department. Give them a try.

day 51..... Beautiful Peas

This is our late garden of peas. I might actually get enough for a meal at one time. Usually the kids eat them faster than they pick them I think. They have set on so nicely. And we have lots of baby cucumbers. About the time that I am finished being sick of seeing cucumbers, these should be good and ready. Our watermelons are slightly larger than a golf ball right now, so we will have to see what those do. Between our own harvesting, farmers markets here and in Fargo, and the bartering for produce that Brian has done with a couple of people, we have had a wonderful bounty of fresh produce this summer. But I really am getting sick of seeing cucumbers. This weekend, we are going to try a recipe for cucumber bread that I found. Crossing our fingers on that one.

day 49..... Bread and Butter Pickles

This is what we did today. It smelled like a pickle truck exploded in here, but the aroma was amazing. Now the hard part, waiting 4-6 weeks for them to be ready to eat. The best part of making the pickles was watching the kids stand in the kitchen listening for the jars to *tink* as they cooled off.

day 46..... Chicken Noodle Soup

And this goes with today's other post. I am sick. Nasty cold. So, today we made chicken noodle soup. I will post the recipe later as this was the tastiest gluten free chicken noodle soup I have ever had. It would rival a lot of regular soups.

day 43..... Pizza Tot Casserole

Maddie made supper tonight. Burger and onion... homemade spaghetti sauce..... mozzarella cheese and tater tots. It was YUMMY! They cleaned the entire dish.
